Smashed Butternut Squash

This recipe is one that has been a favorite for my boys at one time or another (comes in and out of fashion).  I think you will have success with this as well, it is spicy and sweet and has a nice texture (even good for very small children just starting out with “people” food).  A perfect autumn dish!

Ingredients:

1 large butternut squash peeled, de-seeded and cubed  (by far, the most annoying part of the recipe)

Splash of pure maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon of nutmeg

1/4 teaspoon of ginger or cloves

2 tablespoons butter

Quarter to a half cup milk (whatever you have – the more fat the richer the end result)

1 teaspoon Sea salt or Kosher salt ground to taste

Cook the cubes of squash in a steamer basket for 20 minutes.  While it is steaming, add the syrup, seasoning and butter to a large bowl.  Warm up the milk in the microwave for 30 seconds.  When the squash is soft pour it in the bowl over the syrup, seasoning and butter and add half the milk.  Blend with a hand mixer and add more milk if you think it needs it.  Should be a thick but smooth consistency.  Taste and add more salt if needed.

Great to serve with a hearty protein like steak or burgers or with a quick meat pie or beef and cheese gouger!
