Salted Caramel Oatmeal

I just love Brooklyn’s Saucy Caramel, Spoonables, and have now found another way to enjoy their salty caramel.  I think I may need to invest in their 1 pound version.  Click on photo if you want more information.

I saw an oatmeal recipe on their site with walnuts and I wanted to try my own twist instead.   I added chopped pecans (my favorite with caramel), vanilla sugar (sugar with a vanilla bean sitting in it for a while) for tartness and texture dried cherries, and for warmth, cinnamon.  It was so cold this morning, and this really hit the spot!

This feeds 2-4 people (depending if they are kids or adults).

Ingredients

1 cup quick oats

Pinch salt

1/4 tsp cinnamon

3 tbsp vanilla sugar (or use regular sugar)

2 tbsp dried cherries, cranberries and/or raisins

2 tbsp chopped pecans

Hot water (enough to make it the texture you prefer)

1/4 cup milk

Drizzles of salted caramel

In one large bowl pour the oats, then hit it with a pinch of salt, the cinnamon, sugar, dried fruit and pecans.  Pour boiling water in and stir, until you hit the texture you like.  Ladle the oatmeal into the individual bowls, then swirl in a bit of cold whole milk for richness and to cool off the oatmeal for the kids.  Drizzled on the salted caramel, that’s the best part!

Tip:  To make it fun for the family, put whatever dried fruit and nuts you have in the house in little bowls and let them create their own flavor combinations!
