Steamed zucchini mixed vegetables

Steamed zucchini mixed vegetables

Ingredients

1 Green zucchini

1 Yellow zucchini

3 large carrots

1 tbsp butter

Salt and pepper to taste

Clean and peel carrots, and clean the zucchinis while you heat water in the bottom of a steamer pot (you only need 2 cups of water since you will only steam the veggies for a couple of minutes).  Cut the zucchinis and carrot into very thin matchstick shapes, all the same size.  Once the water is boiling, steam the veggies until tender.  This will only take 2-3 minutes, just taste one to check if they are tender enough for your taste.

Secret:  There is a nice gourmet store by me called ‘The Market Basket’ that offers this exact mix of vegetables pre-cut into these small match sticks.  Because they are difficult to cut exactly the same size, I tend to buy them this way from the store.  All other vegetables I buy whole.  Most of the other pre-cut vegetables, like cubed butternut squash, seem dried out and always taste fresher when you cut them yourself.  This mix when bought pre-cut never seems dried out, and allows for a 5 minute side dish you can throw together on a weekday night!

Toss the veggies in large bowl with the butter and seasoning while still hot and serve right away.

Tip:  If your kids like cheese, you can top with some grated Parmesan, if they like mustard you can add a little mustard (1 tablespoon) when you add in the butter and combine.
