Silky Whipped Cream

With the holiday season right around the corner, I will start sharing some of my secret recipes that make the dinner table just go over the top during a big family meal!  Always a good idea to practice a new recipe BEFORE the big day.

This whipped cream is amazing, the kids just eat it out of the bowl with spoons (when I turn my back that is!)  Works beautifully on pumpkin chiffon pie at Thanksgiving, flourless chocolate cake at Christmas.  This will elevate any pudding, pie or dessert table.

Ingredients:

1 container mascarpone cheese, 8 oz (should find in your grocery cheese department)

1 cup heavy cream

1 tsp vanilla

1/3 cup confectioners or icing sugar

Using a handheld blender or standing mixer, whip all four ingredients until thick and fluffy, you should see trailing lines in the cream as in the photo above.   Don’t over whip or the cream might “break”.  If this happens, add another half cup of cream and try again.

Luscious, rich and velvety, you can increase or decrease the sugar depending on what you are topping.  If the dessert is quite sweet, you might want your whipped cream to be less sweet as a contract.
