This is perfect for summer since it is cool and light, but packs a punch. This dessert is for the adults only because it contains alcohol that is not cooked out, and tons of caffeine. I don’t know about you, but my kids have enough natural energy without giving them caffeine, so offer an alternative for those under age hyper kids.
Ingredients List:
1 cup heavy cream
5 tablespoons sugar
4 egg yolks
1 lb. Mascarpone
7 oz. sponge lady finger cookies
(Tough to find, but most grocery stores stock them in summer in the produce section)
4 tablespoons strong Espresso
5 tablespoons Amaretto
Cocoa powder to garnish the top
Whip the cream and 1 tablespoon of the sugar until it is stiff. Mix the egg yolks with the rest of the sugar on the highest speed of a hand mixer until creamy. Add the Mascarpone in spoonfuls and then stir in the cream using a lower mixer speed.
Put a few lady fingers aside for decoration, and then take half of the rest and line a glass lasagna pan or glass trifle dish. Combine the Espresso and Amaretto and trickle half of it over this layer of fingers. Then spread half of the cream as the next layer. Do one more layer of lady fingers with Amaretto/Espresso trickled on it, then a final layer of cream. Top the tiramisu with the decorative lady fingers, and then sprinkle with cocoa powder. Leave to stand in the refrigerator for at least 1 hour before serving.
