When we made it fondue night, I went all the way and included a dessert fondue as well. Who knew, a million years ago, that getting two fondue pots for my wedding would actually come in handy! I used a combination of bitter 60% chocolate and sugar which came out fantastically rich! Some of my clan would have preferred milk chocolate, we will try that next time.
Ingredients
1 cup of heavy cream
3 cups of high quality chocolate (chips or bar cut into small chunks)
I used 60% bittersweet chocolate, so also added in 3 tbsp powdered sugar. If you use milk chocolate, or a mix of peanut butter or butterscotch chips with a milk or semi-sweet chip you will not need the sugar.
Items to Dip: Squares of pound cake, large marshmallows, chunks of strawberries, bananas, pineapples, pears and other fruit you love. Pictured are the dippers we used for cheese and also chocolate.
Items to dip after you dip in the chocolate: Sprinkles, coconut flakes or finely chopped nuts.
Warm the heavy cream until just starting to slightly bubble on the edges, remove from the heat then stir in the chocolate (and sugar if using) and the extract. Stir constantly until nicely blended. If serving to adults, add in Frangelico, Kahlua or your other favorite liqueur.
Tip: Don’t make the chocolate too far in advance and don’t let it boil, just have it at a slow simmer or the chocolate may split. That has happened to me and it ruins the dessert!
