Mashed Carrot & Turnip

My wonderful Mum-in-law taught me this one, we serve it at Thanksgiving and whenever I need to mix things up a bit.  It is smooth, mild in flavor but rich and filling.  I don’t know what other way to get the kids to eat turnips, do you have any ideas?  If so, share in the comments section.

Ingredients

5 large carrots

2 small turnips (the medium sized white and purple veggies near the other root vegetables)

2-3 tbsp butter (depending on how decadent you are feeling)

1/2 cup warmed whole milk or cream (decadence level again, if you are feeling really virtuous, just use 1% milk)

Salt and pepper to taste

Clean, peal and slice into even sized small chunks the carrots and turnips.  Heat them in a steamer basket for 12 minutes, or until fork tender. Pour hot carrots and turnips into a bowl with milk.

Tip:  Put half cup milk in a microwave safe bowl or liquid measuring cup and heat for 30 seconds in the microwave on high.  I always heat the milk when adding it to hot food such as mashed potatoes.  

Pour 1/4 cup milk into the bowl with the carrots and turnips and blend with an immersion blender, hand masher or hand held blender.  If it doesn’t seem smooth, add the rest of the milk and blend some more.  Season with freshly ground salt and pepper to taste, and serve hot.  If this is a part of a big elaborate meal, you can keep this in a pot in a warm oven while you finish the rest of the meal.

Great addition to a holiday meal or a nice smooth side dish to serve with chicken nuggets or breaded turkey
